Ingredients: Cake: ½ lb. butter ½ lb. sugar 1 tsp. vanilla 4 eggs ¼ tsp salt 200 g flour 50 g potato or corn starch 1 tsp baking powder
Buttercream: 1 package Chocolate Pudding (the kind you have to cook), If you use German Pudding add only 2 Tbsp. of Sugar. 2 Tbsp. Cocoa , ½ lb. Butter.
Icing: 150 g of powdered sugar 3 heaping Tbsp. of cocoa 20 g or 2 Tbsp. melted butter hot water (2-3 Tbsp.)

Directions: For buttercream cook pudding according to directions, let it cool by stirring it a lot so you don't get a hard skin on top. Before you do all this take your butter 0ut of the Refrigerator, both butter and pudding have to be the same temperature when you combine them. Beat butter then add pudding slowly, a Tbsp. at a time.
For the icing, combine the sifted powdered sugar and cocoa, melted butter and enough hot water has to be stirred until you have a thick liquid icing.
Spread buttercream on layers to form the cake, top layer stays dry. Then cover the whole thing with the icing.
For me this cake is no problem anymore, but in the beginning it was quite a chore. However I usually end up with an ugly cake. |

Notes: This cake has been a Smith family birthday cake for 50 years. Typical of Grandma, she found one of the most time consuming cakes she could, but its worth it. I've never seen a bite left on a plate at clean up. I think her record for layers is 12. I'm sure it was one of her children's birthdays. This cake has put smiles on three generations in the Smith house. Thanks mom. Wally
