Ingredients: Peanut Sauce 3 tbs peanut butter 1 tbs tahini/sesame butter 2 3 drops of sesame oil (if using super concentrated stuff) 1 2 tbs soy sauce or liquid aminos (per your taste/sodium requirement) 1 tsp honey or agave 2 tsp rice vinegar or ACV or lemon/lime juice 4 tbs veggie stock or water
VEGGIES! 4 small / 2 large zucchini spiralized (I use my mandolin, could use a peeler too?) 1 red bell pepper chopped 1 2 large carrots shredded Ό red onion chopped (optional) 1 cup of broccoli florets and stems chopped, steamed Any other veggies you might like
Other stuffs 1 tbs peanut or canola oil Pinch of red pepper flakes 1 clove of garlic or the equivalent in pre minced Cilantro for garnish (optional)

Directions:1. Cut up all veggies and toss together in large bowl with sauce 2. Leave in fridge for at least 1 hr 3. When ready to cook heat oil with red pepper in garlic in sauce pan 4. If you are serving a big group you may cook everything at once in a wok, or just prepare 1 serving for yourself, either way throw the amount you want to consume in the pan 5. The sauce will be a bit watery (from the veggies), so make sure you get some from the bottom of the bowl. Cook on medium heat until the sauce begins to thicken. 6. Taste and adjust to your liking, then serve |

Notes: Love. First attempt was a tad too watery, but with revision could be as good as its carboloaded counterpart. I wanted something that could substitute my all-time favorite easy meal ramen noodles with steamed broccoli and peanut butter sauce and this definitely did the trick. Its great because you can prep everything early in the week and then cook the meals you want as needed. If you feel that the sauce doesnt cover the amount of veggies, double it! Its all about whether you like it, not how closely you followed the recipe, so tweak away! You could even use your favorite stir fry sauce! Or make it into some delicious ramen with a perfect medium boiled egg on top. Use and abuse them zoodles!
One last note if you dont have a spiralizer dont trip! I use my mandolin, but you could also use a peeler for a thicker take on zoodles. Regardless of how you do it, rest assured you can still make this without a spiralizer, just get inventive!
