2 lg. Slices ham
1 lg. Onion
6 lg. Tomatoes
1 pt. Okra
1 tbsp. Oil
1 Chicken quartered
½ tsp Red Pepper Flakes
1 Bay Leaf
1 tsp Dried Thyme
3 qts. Boiling Water
Salt and Cayenne pepper to taste

Cut ham slices into small slices. Slip skin off tomatoes; chop fine and reserve juice. Wash and steam okra and slice into ½"widths. Add oil to a large stock pot; when hot, add chicken and ham. Cover and cook 10 minutes. Add onions and tomatoes; brown lightly. Add okra seasonings, and reserved tomato juice. Add 3 quarts boiling water and simmer 30 minutes. Remove chicken; cool enough to handle. Skin and debone; return chicken to pot. Simmer 30 minutes. Serve over cooked rice.
