½ c Butter
8 lg Spanish Onions sliced
1 tsp Sugar
7 c Beef Broth
8 French Bread sliced and toasted
2oz Parmesan Cheese grated
2oz Gruyere Cheese sliced
½ c Dry Sherry Wine


Directions:
Directions:

Melt butter; add onions. Cover and simmer for 1 hour, Remove lid. Add sugar and continue to cook on medium high until onions are browned and caramelized. Stir in broth, salt, pepper, and Sherry. Simmer 15 - 20 minutes more.
Ladle soup into oven safe bowls. Cover with bread and cheese. Put under a broiler until cheese is melted than remove. BOWLS WILL BE HOT!
