1 1/2 pounds pork or beef cubed (I like to use my left over roasts to do this recipe)
1 (#2) can pineapple
1/2 cup brown sugar
1/4 cup vinegar
1 onion, diced
3 T soy sauce
1/4 tsp salt
1 green pepper, diced
3 T cornstarch
1/2 cup water

Directions:
Directions:
Brown meat and simmer for 1 hour in vinegar. (If using left over roast I cube and then add after sauce is made to warm.) Add water, soy sauce, brown sugar and salt to pork after this. Add drained pineapple, green pepper and onion. Cook 5 minutes. (If using left over roast, saute vegetables in a little butter before adding. Thicken the sauce with pineapple juice mixed with cornstarch. Serve over rice or noodles.
