1 c grits (not instant or quick cook)
4 c water
salt & pepper
1 lb shrimp, peeled and deveined
3 Tbsp butter
2 c cheese, shredded
6 slices bacon, chopped
4 tsp fresh lemon juice
2 Tbsp fresh parsley
1 c thinly sliced scallion
1 clove garlic pressed

Directions:
Directions:
Bring water to boil, add salt and pepper; stir in grits. Cook 20-25 minutes. Remove from heat; stir in cheese and butter. Cook bacon,drain well and add shrimp. Cook until shrimp is pink. Add lemon, garlic, and scallions. Saute about 3 minutes and mix into grits. Serve immediately.
