3/4 lb gnocchi
1 -2 zucchini
1 oz roasted red peppers (jarred)
1/4 cup of cream
1 14oz can of whole peeled tomatoes
2 cloves of garlic
1 oz grated parmesan cheese
1 tsp oregano

Directions:
Directions:
Prep all ingredients before starting. Cube zucchini, mince garlic, chop peppers, place tomatoes in a bowl and gently break apart with your hands. Start a pot of boiling water.

In a medium pan, heat 2 tablespoons of olive oil on medium high until hot. Add the zucchini and cook for 2-3 minutes until browned. Add the garlic and season with salt and pepper. Stir for 30 seconds or until lightly browned.

To the pan, add the chopped peppers, tomatoes, and oregano. Season with salt and pepper. Cook, stirring occasionally, 4 to 6 minutes, or until slightly thickened. Turn off the heat.

While the sauce cooks, add the gnocchi to the pot of boiling water. Cook 2 to 3 minutes, or until the gnocchi float to the top of the pot. Drain thoroughly.

Add the cooked gnocchi and and cream to the pan of sauce. Cook and stir frequently, 1 to 2 minutes, or until the gnocchi is coated.

Garnish with grated parmesan cheese.
