1 stick butter
1 ¼ c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
¼ tsp. salt
1 tsp. baking soda
¼ c. milk

Crumbs:
3 sticks butter (barely melted and then cooled)
1 T. vanilla
4 c. flour
⅔ c. brown sugar (packed)
⅔ c. granulated sugar
1 T. cinnamon

Directions:

Mix flour, sugars, and cinnamon together by hand. Add vanilla to cooled butter, then pour into flour mixture to form crumbs. Set aside
Preheat oven to 350º (325º if using dark or coated pan).
Grease a 10 x 15 inch jelly roll pan (or spray with non-stick baking spray) and line bottom with parchment for easy removal.

Cream butter and sugar. Add eggs and vanilla and beat until smooth. In a separate bowl combine flour, baking soda, and salt and add to mixing bowl alternately with milk mixing well after each addition. Pour into prepared baking pan. Bake for 15 minutes. Remove from oven and spread crumbs uniformly on top of cake. Return to oven and bake 25 minutes more.

Sprinkle with powdered sugar when completely cool if desired.

This is based on a recipe from my good friend Eleanor Bohacs. Don't know where she got it, but it's a winner -- the best part is if you're not in the mood to bake a cake, just use a Duncan Hines Butter Cake Mix. Works great! I make mine in a 12" x 17" half sheet pan because that's what I have and it turns out fine. Just shorten the first baking time to 10 minutes.

Yes, this is definitely a bunch of coffee cake. Feel free to cut the recipe in half, but it does freeze really well. I cut it into 4 to 6 pieces, wrap, and freeze for up to 3 months.
