2 1/2 cups QUICK MIX
1 egg, beaten
4 T sugar
1 cup milk or water

Directions:
Directions:
Place quick mix in a medium bowl. Add sugar and mix well. In another bowl combine egg and milk or water. Add wet ingredients all at once to dry ingredients. Stir just until blended. Fill greased muffin tins 2/3 full. Bake at 425 degrees for 15 to 20 minutes or until lightly browned,

Variations:
Fresh peach - Fold 1 cup diced fresh peaches into batter before putting dough into muffin tin. Increase baking time to 20 to 25 minutes.

Orange muffins - Add 1 T fresh orange peel (grated) to dry ingredients before adding wet ingredients.
