3 (8 oz) cream cheese, soft (leave out at room temp for a couple of hours)
1 cup sugar
4 eggs
2 tsp lemon juice
1 Box of vanilla wafer cookies
1 can pie filling (I like cherries)

Directions:
Directions:
1. Mix cheese and sugar until smooth. Add eggs and lemon juice. Beat for 4 minutes.

2. Line muffin tin with cupcake liner and place 1 vanilla wafer in the bottom of each cupcake liner. Pour mixture into cupcake papers, about 2/3 full.

3. Bake at 350ºF for 20 minutes.

4. Cool for 30 minutes.

5. Top with pie filling and allow to set for a few minutes.

6. Cover and refrigerate.
