11 pounds chicken (4 medium fryers cut up)
3 T parsley flakes
4 tsp salt
2 tsp dried basil leaves
4 quart water
4 carrots, peeled and chopped
1/2 tsp pepper

Directions:
Directions:
Combine all ingredients in a large pot or dutch oven. Cover and cook over high heat until water boils. Simmer until chicken is tender or about 1 1/4 hours. Remove from heat. Strain broth and refrigerate until it can be skimmed.

Cool chicken, remove and discard skin and bones. Put chicken into six 1 pint containers. Pour skimmed chicken broth into six other 1 pint containers. Seal and label. Freeze and use within hour months. Use broth and mix to make Club Chicken Casserole or Sweet and Sour Chicken. Use mix to make Chicken burgers or Corn-Tortilla Chicken Soup.
