1 pound ground beef
1 medium onion
1 clove garlic
1 teaspoon chopped parsley
2 tablespoons olive oil
2 cans tomato paste
2 cups water
½ teaspoon salt
½ teaspoon pepper
8 ounces lasagna noodles
2 eggs
1 carton small curd cottage cheese
½ to 1 cup grated parmesan cheese
1 pound Mozzarella cheese sliced
½ to 1 pound shredded Mozzarella cheese

Brown ground beef in oil with onion and garlic. Add tomato paste, parsley, and two cups of water with salt and pepper. Simmer 30 minutes. Meanwhile, cook lasagna noodles as directed on box. Mix eggs with cottage cheese, and grated parmesan cheese. Spray 9x13 inch pan with oil. Spread ½ cup sauce in pan. Layer noodles, sauce, cottage cheese mixture, and slices of mozzarella cheese. Repeat until pan is full. Sprinkle shredded Mozzarella cheese on top and bake at 375º for about 30 minutes. Short cut: use jars of spaghetti sauce instead of making it.
