2 Tbsp vegetable oil
1 1/2 lbs red potatoes (unpeeled)
1 green pepper, stemmed, seeded, cut into 1/2 inch pieces.
1 red bell pepper, stemmed, seeded and cut into 1/2 inch pieces.
1 onion chopped
1/2 cup chicken broth
2 tsp Worcestershire sauce
Salt & pepper
4 scallions, sliced thin

Directions:

Cut potatoes into 1/2 inch pieces.
Heat the oil in 12 inch nonstick skillet over medium heat until shimmering.
Add potatoes, green and red peppers and onions and stir to coat with oil.
Stir in the broth, Worcestershire sauce and 1 1/2 tsp salt.
Cover and cook, stirring occasionally, until the potatoes are tender, about 15 minutes.
Uncover and increase the heat to medium high.
Cook, stirring occasionally, until liquid has evaporated and potatoes and peppers are spotty brown - about 12 minutes.
Season with salt and pepper.
Stir in scallions and serve.
