8 eggs
1 cup milk
1/3 cup flour
1 bell pepper, finely chopped
3 green onion, finely chopped
salt & pepper
8 slices bacon, ham or sausage
1 can chopped green chilies
1 ½ cup grated cheddar cheese
1 can mushrooms-drained
Salsa

Directions:

Line 15x10x1-inch pan with parchment paper, with short ends extending over shortest sides of pan. Spray with cooking spray.
Beat eggs, milk and flour in large bowl with whisk until well blended. Add in other ingredients except for cheese and salsa.
Pour into prepared pan. Bake 14 to 16 minutes or until edges are set. Top with cheese, bake 2 minutes or until melted.
Roll up omelet immediately, starting at one short end and peeling off paper as omelet is rolled. Place on platter. Cut into slices. Top with salsa
