2 cups all purpose flour
2 cups sugar
3 cups grated carrots
2 tsp cinnamon
½ tsp salt
1 tsp baking powder
2 tsp baking soda---mix well!

Beat in:
4 eggs beaten
1 ½ cups corn oil
1 tsp vanilla


ICING:
12 oz cream cheese (1 and ½ bars of cream cheese)softened
3/4 cup butter (1 and ½ sticks) softened
1 tsp vanilla
2 ½ cups powdered sugar….maybe more---is that 3 and ¾ cups

2 cups chopped pecans --depending on how much you like---I put in between layers!!! and press into icing on sides of cake for a beautiful presentation

Line 9 inch panswith parchment paper, well greased and floured. I grease pan and parchment.

Bake at preheated 350 for 20-30 minutes. Let cool.

For icing, blend cream cheese and butter with hand held mixer. Add vanilla and stir in powdered sugar. Ice each layer, add chopped pecans between layers if you like and press into finished iced side of cake.
