1 lbs flank steak
c cornstarch
2 Tbsp olive oil
Tbsp garlic, minced
c water
c light soy sauce
c brown sugar
red peppers in strips
green peppers in strips
onion in chunks
rice, prepared
green onions, for garnish

Slice the flank steak against the grain (the grain is the length of the steak) the long way inch think pieces and add it to a ziploc bag with the cornstarch, shake to coat. Add olive oil, garlic, soy sauce, water, and brown sugar to slow cooker. Stir ingredients. Add coated flank steak and stir again until coated in the sauce. Cook on high for 1.5-2.5 hours or on low for 3-4 hours . Add the green and red peppers along with onions, stir to combine everything, and cook for a final 30 min on high or 1 hour on low or until meat is cooked throughout and tender, but veggies are still crisp. Serve immediately on a bed of rice. Can garnish with green onions.
