1 C. margarine 1 C. crushed pineapple, drained well
1 C. granulated sugar 1 C. brown sugar, packed
2 eggs 1 tsp. vanilla
1 tsp. baking powder 1/2 tsp. baking soda
1 tsp. salt 4 C. flour
1 C. chopped nuts (optional)

Directions:

Cream margarine, sugar, eggs, and vanilla. Add drained pineapple gradually to creamed mixture. Gradually add dry ingredients. Stir in nuts. Bake on a greased cookie sheet at 375 for 12 to 15 minutes or until lightly brown around the edges. Top with pineapple glaze.

Pineapple Glaze: Combine 1/2 C. pineapple juice with enough powdered sugar to make a light glaze. Brush top of cooled cookie with glaze.
