Cake Batter:
1⅛ C flour
1 C sugar
2 tsp baking powder
½ tsp salt
⅓ C shortening
⅔ C milk
1 tsp vanilla
1 egg

Pineapple Sauce:
⅓ C brown sugar
1 Tbsp cornstarch
1 C pineapple juice w/water
2 Tbsp butter
½ tsp lemon juice

Prepare Pan:
Melt butter in a skillet. Sprinkle brown sugar evenly over butter, arrange pineapple on the buttered coating, then add cherries and pecans if you choose.

Cake Batter:
Mix all dry ingredients. Mix shortening & sugar together, add egg, milk & vanilla. Mix dry and wet ingredients. Pour over arranged pineapple and bake at 350º for 30-40 minutes or until toothpick comes out clean. As soon as you take out of oven, turn up-side-down on serving platter, and leave skillet over for a little bit until brown sugar mixture starts to run out, so you know it has all released.

Pineapple Sauce:
Mix brown sugar & cornstarch in saucepan, then stir in pineapple juice, bring to a boil, boil for 1 minute, stirring constantly. Remove from heat add butter & lemon juice. Serve warm over each serving.
