Mince Pie with Blackberry Sauce Recipe

Ingredients: Pastry for two crust pie
1 tsp melted butter 1 1/2 cups canned blackberries 1 1/2 cups mincemeat Blackberry Sauce
Blackberry Sauce: 1 T sugar 1 T cornstarch or 2 T Flour 1 cup blackberry juice (drained from canned berries) 1 T butter 1/8 t salt 2 t lemon juice

Directions:Drain juice from berries and save for the sauce Mix berries with mincemeat Mix together
Place in the pastry-lined pan - spread with melted butter to prevent soaking of filling into lower crust
Add filling into pie pan with pastry that has been topped with butter
Cover with the top crust
Bake 35 minutes at 450 degrees for the first 15 minutes then reduce to 325 degrees for about 20 minutes or until pie is nicely browned
Use one 8 inches deep pie pan
Now for the blackberry sauce mix sugar and cornstarch or flour together in a saucepan. Blend in blackberry juice and cook until smooth and thickened - whisking constantly - not too hot! Remove from fire. Add butter, salt, and lemon juice. Serve hot over warm pie |

Notes: This is a tricky one. I thought that Grandma used fresh berries from her garden. She probably did. This was the recipe in the box.
