3lbs-Ricotta cheese
2lbs-Flour
1 Tablespoon salt
A little extra flour so macaroni doesn't stick together

Directions:

Pour flour into clean table add ricotta and salt. Start kneading until it forms a nice ball. Then roll into strips, then cut into 1/2 inch pieces, sprinkle with a little flour to keep from sticking together. Next using your thumb, or the little bumpy side of a cheese grater, push and roll to form a little boat. You will need to put a little flour on the cheese grater to keep from sticking. This will take practice, but not really that hard. Once again, sprinkle it with a little flour. Once all done, keep on a flat tray to keep from sticking. Boil a pot of water, when boiling ,add a little salt, then macaroni. They are done when all float to the top, cook about another minute or two drain, then add sauce,and enjoy!
