1 yellow onion, chopped
2 lbs. bone-in chicken thighs, skin removed ( I used boneless skinless)
30 ounces tomato sauce
1 tablspoon dried minced garlic
1 tablespoon freshly grated ginger
1 teaspoon curry powder
1 tablespoon + 1 teaspoon garam masala
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground tumeric
3/4 cup full-fat coconut milk
1/2 cup chopped cilantro

Directions:
Directions:
Chop Onion. Put it in the bottom of slow cooker.
Place chicken thighs on top of onions
Pour tomato sauce over chicken. Sprinkle garlic through turmeric over tomato.
Cook on high 4 hours or low 8 hours

Remove chicken and shred. Add back to slow cooker. Add coconut milk
Garnish with cilantro when served. Serve over rice. Would also make good sandwich filling.
