1/3 c. vegetable oil
1/3 c. sugar
1 tsp. vanilla extract
1 large egg
1 very ripe banana
1 1/2 c. whole-wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 c. low-fat milk
1/2 c. chopped nuts

Directions:
Directions:
Preheat the oven to 350 degrees F. Cream together the oil, sugar, vanilla, egg, and banana. Add the flour, baking powder, baking soda. and cinnamon. Blend lightly while stirring in the milk and nuts. Pour the batter into a lightly oiled
9" X 4" loaf pan. Bake for 45 - 50 minutes, until browned and batter pulls away from sides of pan.
