Chocolate Chip Banana Bread Recipe

1 C shortening (I often use butter flavor Crisco)
2 C white sugar
2 eggs
2 Tbsp. mayonnaise
6 very ripe bananas, mashed
3 C all-purpose flour
½ tsp salt
1 tsp. baking powder
2 tsps. baking soda
1 C semi-sweet chocolate chips

Directions:

Preheat oven to 350º. Lightly grease loaf pans.

In a large bowl, cream together the shortening and sugar until light and fluffy.

Stir in the eggs one at a time, beating well with each addition.

Stir in the mayonnaise and bananas.

Stir together the flour, salt, baking powder & baking soda. Blend the flour mixture into the banana mixture; stir just enough to evenly combine.

Fold in the chocolate chips.

Pour into loaf pans and bake until a toothpick inserted into the center of the loaf comes out clean, about 50 to 75 minutes. Cool bread in the pans for about 20 minutes before removing from pans to a wire rack to cool completely.

I usually put a little sprinkling of sugar on the tops before baking.

Hint: When bananas on the counter start to get too brown, put them in the freezer until you are ready to make bread. Simply take them out of the freezer a few hours before you start to bake, or thaw them in the microwave at low power. They will slide right out of their peels and there will be no need to mash them! ;-)
