2 Chicken breasts
1-2 stalks celery, diced
1 8-oz. can crushed pineapple
Mayonnaise
8 oz. Cream cheese
Pecans, finely chopped, if desired

Directions:
Directions:
Cut up finely cooked chicken breasts. (I use a food processor). Fold in diced celery and drained pineapple (save pineapple juice). Mix these ingredients with your favorite mayonnaise (I use Hellman's). May add finely chopped pecans.

Place the mixture onto a serving plate and form into a ball.

Soften cream cheese and mix with pineapple juice until spreading consistency. Spread cream cheese mixture over the chicken ball as though you are icing a cake.

Place in the refrigerator, as it needs to chill for all the flavors to meld together. Can be made a couple of days ahead.

Serve with crackers.

This is especially nice for a ladies' affair. May decorate with pansies or other herbs or edible flowers.
