2 lb potatoes
2 Tbsp margarine
2 Tbsp parmesan, grated
½ c Edam cheese, grated
2 eggs
⅔ c milk
pepper

Directions:
Directions:
Coat washed potatoes with butter, prick with fork. Bake until soft baked. Carefully slit top of each potato and hollow out, keeping skin intact. Mash potato, add butter, parmesan and Edam cheeses. Beat the milk and eggs together and gradually add to potato cheese mixture. Stuff each of the potato skins, they will be overstuffed. Sprinkle with a bit of cheese. Paprika, if desired. Bake until golden brown. Serve hot.
