Two tbsp. olive oil
1 onion
2 jalapéno peppers
Salt and pepper to taste
4-5 corn tortillas cut into 2 inch pieces
8 large eggs
2 tbsp. salsa
1 cup shredded cheddar or monterey jack cheese
2 tbsp. chopped cilantro

Directions:
Directions:
Heat oil in a cast iron or nonstick skillet and saute the onion over medium heat until translucent. Add jalapéno and salt and pepper and cook another 5 minutes. I sometimes add a chopped anaheim pepper or red pepper.

Whisk the eggs in a large bowl and add the salsa and salt and pepper and set aside.

When the onion is ready, add the cut tortillas and cook, stirring frequently, until soft, 2-3 minutes.
Add the egg mixture and scramble over low leat until almost set. Sprinkle with the shredded cheese and remove from heat and serve.

You can serve with avocado, salsa, sour cream, green onions.
