6 yams or sweet potatoes
⅓ c butter or margarine
⅓ c apple juice
½ tsp salt
½ c chopped pecans
½ tsp pumpkin pie spice
½ c brown sugar, firmly packed
¼ c flour
2 Tbsp butter or margarine

Directions:
Directions:
Arrange unpeeled yams in large saucepan, cover with water; bring to boil. Cook over medium heat, covered until tender, about 25-35 minutes; drain. When cool enough to handle, peel yams. Mash yams; beat in next 6 ingredients. Spread in lightly buttered baking dish. Combine ½ of the brown sugar, flour, 2 tsp butter and pecans; sprinkle over yam mixture. Refrigerate covered, several hours or overnight. To bake: Bring to room temperature, about 2 hours. Bake covered in a preheated 350º oven for 30 minutes. Uncover, continue baking another 15 minutes.

"Eggs and Dates"
There was an alcove in the house where the eggs were candled, Georgia and Helen had to candle the eggs before going out on their Friday night dates. Barbara explained to us, "I offered to help them thinking that I could go too."
Aunt Georgie and Aunt Helen gave the job of cleaning all of the chicken poop off the eggs to Barbara. Barbara did her job, but was not invited to go out on a date with either Georgia or Helen. So she went in and cried to Grandma, "I even cleaned all of the poop off of the eggs, and still didn't get to go."
