Tres Amigos Chili con Queso

1 (32-ounce) package Velveeta cheese

2 (10-ounce) cans Rotel tomatoes, strained and liquid reserved
½ cup finely chopped jalapeno peppers (opt)

Directions:
Directions:
In a double boiler, melt cheese. Chop tomatoes and add to cheese. Add peppers to cheese mixture and enough tomato liquid to make a good thick sauce consistency.
 

Queso Blanco


Ingredients:  
Ingredients:  
1 cup mayonnaise
1½ cups Parmesan cheese
1 cup shredded Monterey Jack cheese
2 (4-ounce) cans chopped green chilies, undrained
¼ teaspoon cumin
⅛ teaspoon chili powder

Directions:
Directions:
Combine all ingredients and spoon into a 1-quart baking dish. Bake at 350F for 20 minutes. Serve hot with tortilla chips.

This is an easy dish to prepare and simply means “white cheese” in Spanish.
 

Spinach con Queso


Ingredients:

1 (10-ounce) package frozen chopped spinach, thawed

1 (16-ounce) package Pepper Jack cheese, cubed
½ cup milk
1 small onion, finely diced
1 (2-ounce) jar diced pimentos, drained

1 medium tomato, diced

tortilla chips



Directions:
Directions:
Place spinach between paper towels and squeeze out all liquid; set aside.

In top of a double boiler, combine cheese, milk, onion, and pimento. Reduce heat to low and cook until cheese melts. Add spinach and tomato, stirring well.

Serve warm with tortilla chips.

Makes 2 Cups
