Tres Amigos Chili con Queso |

Ingredients: 1 (32-ounce) package Velveeta cheese
2 (10-ounce) cans Rotel tomatoes, strained and liquid reserved ½ cup finely chopped jalapeno peppers (opt)

Directions: |
Directions:In a double boiler, melt cheese. Chop tomatoes and add to cheese. Add peppers to cheese mixture and enough tomato liquid to make a good thick sauce consistency. |

Queso Blanco |

Ingredients: 1 cup mayonnaise 1½ cups Parmesan cheese 1 cup shredded Monterey Jack cheese 2 (4-ounce) cans chopped green chilies, undrained ¼ teaspoon cumin ⅛ teaspoon chili powder

Directions: |
Directions:Combine all ingredients and spoon into a 1-quart baking dish. Bake at 350F for 20 minutes. Serve hot with tortilla chips.
This is an easy dish to prepare and simply means “white cheese” in Spanish. |

Spinach con Queso |

Ingredients: |
Ingredients: 1 (10-ounce) package frozen chopped spinach, thawed
1 (16-ounce) package Pepper Jack cheese, cubed ½ cup milk 1 small onion, finely diced 1 (2-ounce) jar diced pimentos, drained
1 medium tomato, diced

Directions: |
Directions:Place spinach between paper towels and squeeze out all liquid; set aside.
In top of a double boiler, combine cheese, milk, onion, and pimento. Reduce heat to low and cook until cheese melts. Add spinach and tomato, stirring well.
Serve warm with tortilla chips.
