1 cup unbleached flour (King Arthur Organic white whole wheat flour)
1/4 cup plus 3 Tablespoons cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 cup almond or soy milk
1/4 cup olive oil
1/2 cup maple syrup
1/4 cup Sucanat or organic cane sugar
1 teaspoon apple cider vinegar
1 teaspoon vanilla
1 cup chocolate chips (I prefer Enjoy Life brand)

Directions:
Directions:
Preheat oven to 350º. Line muffin tin with liners and spray liners with nonstick cooking spray.

Sift together flour, cocoa powder, baking powder, baking soda and salt.

In large bow, combine the milk, oil, maple syrup, sugar, vinegar and vanilla. Beat on medium speed with electric mixer for 2 minutes. Add the dry ingredients to the wet in 2 batches, mixing as you go. Beat for one minute more then stir in the chocolate chips.

Fill the muffin cups approximately 3/4 full and bake for 28 minutes or until done.
