4 egg whites
1 ¼ cup sugar
1 ½ tsp vanilla
30 ritz crackers, crushed
1 ½ tsp baking powder
1 cup chopped pecans


Directions:
Directions:
Beat 4 egg whites until stiff. Add 1 ¼ cup of sugar, a little at a time. Add 1 ½ tsp vanilla.

Crush 30 ritz crackers and add 1 ½ tsp baking powder, and 1 cup chopped pecans.

Fold cracker mixture into egg whites and pour into greased and floured pan. Bake at 350 for 20 minutes. Cool and top with cool whip and more chopped pecans. (I doubled the recipe and cooked in a 9x13 dish. Cut into squares and serve).
