Ingredients: 2 c sifted cake flour 2½ tsp baking powder 1 tsp salt 1⅓ c sugar ½ c shortening ¾ c milk 1 tsp vanilla 4 egg whites, beaten to soft peak
Japanese Frosting: 4 tsp butter 2½ c confectioners sugar 2 egg white ¼ tsp vanilla top with coconut, if desired sliced bananas between layers

Directions:Sift together cake flour, baking powder and salt; placing in large mixing bowl. Add sugar, shortening, milk, and vanilla. Mix with mixer for 2 minutes. Add beaten egg whites and mix 1 minute longer. Bake at 350º in 2, 9 inch pans for 25-30 minutes. I iced it with the following frosting...
Japanese Frosting: To butter, add gradually 1½ cups of confectioners sugar. Beat egg whites until stiff and beat in gradually 1 cup confectioners sugar. Combine mixtures and add vanilla. Add coconut to top of cake if desired and sliced bananas between layers. |

Notes: In Loving Memory of Ivan Mason...Love Georgia. This was one of Ivan's favorite cakes. Georgia often made it for his birthday.
"The Penny and the Pie" Georgia remembers raking her fingers across a freshly baked pie. When Granddad asked, "who did this?" It became very quiet in the room. Granddad said, "I have a penny in my pocket and will give it to whoever said they did it." Sam fessed up saying, "I did it!" Georgie said, "Oh you did not!"
