1 c mashed persimmon pulp
2 c sugar
1 c sour milk (buttermilk)
2 c flour (scant)
2 eggs
2 tsp baking powder (heaped)
1 tsp soda
1 tsp cinnamon
1 lump butter
1 c thin sweet cream

Directions:
Directions:
Mix all dry ingredients;add persimmon pulp, butter, & sour milk. Mix, add thin cream. Bake in 9 x 13 inch baking dish at 350 for approximately 1 hour. Can add nuts if desired.

Top with whip cream....A favorite at Christmas!

Ask Mark how difficult it is to get Persimmons in Minnesota. He called Willeen who did pick it up for him. However in order to transport the pulp to Minnesota, she needed to get dry ice. She had Becky Sims get the dry ice; but in order to get dry ice, Becky had to travel a distance to get it. It took a lot of planning and organizing. Ask anyone from Minnesota, "What is persimmon pudding?" They say, "Persimmon what? What's a persimmon?"
