Shredded Chicken (see crockpot chicken taco) or can use Rotisserie Chicken
Note - If using Rotisserie Chicken you will need taco seasoning package and water & cook per seasoning directions
Pepper Jack cheese grated
corn tortillas
queso of choice

Directions:
Directions:
Heat tortillas in microwave for 30 - 40 seconds
9x13 pan
Add chicken, and pepper jack cheese in tortillas. Roll up and put in pan
after all Enchiladas are rolled up pour queso over
bake at 350 for 20 - 30 minutes
