Ingredients:  
1 lbs ground beef (unless you are Brooke deer meat is better)
3/4 cup of water
package of taco seasoning
grated pepper jack
grated cheddar or mexican cheese
corn tortillas
1 can chili (no beans)
1 can enchiladas sauce

Directions:
Directions:
Use beef, water and taco seasoning - cook per taco seasoning direction
Put chili and enchiladas sauce in sauce pan and heat up
Heat corn tortillas in microwave (30 - 40 seconds)

Assemble the enchiladas in 9x13 pan
add beef and pepper jack cheese; roll up enchiladas - enough that they roll up to around 1 inch circle
when all enchiladas are rolled up top with chili/enchiladas sauce mixture, then top with cheddar/mexican cheese
cook for 20 - 30 minutes on 350
