2 ½ cups all-purpose flour
2 ½ teaspoons baking soda
⅜ teaspoon salt
3 cups whole bran cereal
1 cup boiling water
2 eggs, beaten
2 cups buttermilk
1½ cups sugar
½ cup cooking oil
1 cup raisins (optional)

Directions:
Directions:
In mixing bowl, stir together ...flour, baking soda and salt. Set flour mixture aside...
In a small mixing bowl, place 1 cup of the bran cereal.
Pour the boiling water over the cereal, and set aside...
In a large mixing bowl, combine eggs, buttermilk, sugar, cooking oil and the remaining bran cereal....
Add flour mixture to egg mixture. Stir just until moistened. then add the soaked bran ...stir until just well-combined.
Fold in raisins...
Transfer the batter to a covered container and refrigerate it overnight....or for up to 3 days...
To bake, grease 2 ½-inch muffin cups or line muffin cups with paper baking cups.
Spoon batter into the prepared cups, filling each one 2/3 full...
Bake in 400º oven for 15-20 minutes or until tops spring back when lightly touched...
Makes about 24 muffins.
