2 chicken breast
1 cup chicken broth
1 can black beans, drained and rinse
1 can corn, drained
1 cup salsa (I use can of Rotel)
1 package of taco seasoning
1/2 cup sour cream (optional)
1/2 cup grated cheddar cheese (optional)
Tortilla ships

Directions:
Directions:
Place chicken breast in crock pot. Pour chicken broth, black beans, corn, salsa, and taco seasoning over chicken. I also add water (approximately 2 cups)
Cook on low for 6 hours (or high for 3 hours)
Remove chicken and shred. Re-add to soup
If desired add sour cream and cheese to crock pot. Stir until smooth. Or add desired amount to individual servings.
Serve with tortilla chips
