Ingredients: 2 lb ground Beef 80/20 4 Oz Crumbled Blue Cheese BBQ Beef Rub (Daddy B's) 4 Strips Bacon 4 Slices Red Onion 1/4 inch thick Extra Virgin Olive Oil 4 Kaiser Buns split and lightly buttered 4 Lettuce leaves 4 Slices Ripe red Tomato 1/4-1/2 inch thick 1 Ripe Avocado, pealed and pitted, Sliced 1/4 C Daddy B's BBQ Spicy Sauce

Directions:Divide the Beef into 8 equal balls, using hands flatten each ball to size just larger than Bun, place each patty on plastic wrap. Divide Blue Cheese into 4 equal amounts and place on center of patty leaving about 1/2 inch margin of beef. Top Beef and Cheese patty with the other Beef patty and using finger tips seal the edges of the burger to prevent the cheese from leaking.
Season generously, both sides of each burger with Daddy B's BBQ Beef Rub, cover with plastic wrap and place in refrigerator for 30 minutes.
Brush Onion slices with olive oil and season with BBQ Beef Rub.
Prepare Grill with High Heat for Burger cooking and one burner area with Medium Heat for Onions and Bacon. Grill Burgers 3 to 6 minutes each side until internal temp is 160 degrees. Move Bacon out of any flare ups and remove Bacon and Onions to platter when done.
Lightly butter and toast on grill the inside of each half of the buns and build your Burger as desired and place warmed BBQ Sauce on top of Patty. |
