6 tbsp butter
6 tsp olive oil
9 large red bell peppers, sliced (finely)
6 carrots
6 Anjou Pears, pealed and sliced (finely)
3 (32-oz) container of fat-free chicken broth
1 tbsp of pepper
¾ tsp salt

STEP 1

Melt butter with oil in a pan over medium heat; add bell peppers, carrots, and pears; and saute 8-10 minutes or until tender.

STEP 2

Stir in chicken broth, pepper, and salt. Bring to a boil; cover, reduce heat to low, and simmer 25-30 minutes. Let cook for about 20 minutes.
