3 cups white sugar
½ cup light Karo
½ cup water
2 room temperature egg whites
1 cup smooth peanutbutter

Directions:
Directions:
Cook sugar, corn syrup, and water in a pot over low heat stirring constantly until sugar is dissolved. On humid days use 1 Tbsp less water. Cook without stirring until 260º on candy thermometer( hard ball stage).
Beat egg whites until stiff peaks form. Continue to beat while pouring hot syrup in a rhin stream in egg whites. Beat until mixture holds shape and becomes slightly dull. Warm peanutbutter in microwave. Put cloth on the counter Nan used a pillow case with confectionary sugar on it. Pour mixture on pillowcase and roll into a rectangle. Spread with peanut butter and roll like a jelly roll. Let it sit a bit then cut with string.
