3 eggs
1 cup chopped celery
1/2 cup sliced mushrooms
6 T butter
soy sauce or sweet and sour sauce
1 cup ham, cooked and chopped (or any meat of choice)
1/2 cup chopped green onions
4-5 cups cooked rice
salt and pepper to taste

Directions:
Directions:
Cook the rice. Melt 3 T of the butter in a frying pan. Add the celery, green onions, ham and mushrooms. Saute until tender. Scramble the eggs in a separate pan. In the large frying pan combine the rice, eggs, and sauteed vegetables and ham. Toss gently and add salt and pepper. Serve with sweet and sour sauce or soy sauce. This recipe is from my Aunt Ellen Romrell in the Parkinson Cookbook.
