1 14 1/2 ounce can diced tomatoes, undrained or 1 quart home canned whole tomatoes, diced
1 6 ounce package stuffing mix for chicken
2 cloves garlic, minced
1 tsp dried basil leaves
1/2 cup water
1 1/2 pounds boneless, skinless chicken, cut bite size pieces
1 cup mozzarella cheese
Directions:
Directions:
Preheat oven to 400 degrees. Place tomatoes in medium bowl. Add stuffing mix, water and garlic. Stir just until stuffing mix is moistened. Set aside. Place chicken in 13 x 9 baking dish, sprinkle with basil and cheese. Top with stuffing mixture. Bake 30 minutes or until chicken is cooked through.
