1 T. butter
1 T. Crisco
5 med. potatoes, sliced ¼" thick
1½ tsp. salt
Pepper
¼ to ½ purple onion, sliced

Directions:
Directions:
Melt butter and Crisco in skillet. Let oil get fairly hot (300º). Add potato slices. Sprinkle with half the salt. Let fry 10 minutes on medium-high heat, turning to get most of them browned. Season with remaining salt. Put sliced onions over potatoes, cover with lid. Let simmer over low heat (275º) for 15 minutes, stirring occasionally, until potatoes are tender. Before serving, turn up heat and remove lid to crisp.
