12 whole short ribs
salt and pepper to taste
3 tbsp. olive oil
1 cup red wine..not cooking wine drinking wine
32 oz beef broth or stock
2 tbsp. minced rosemary fresh is best
2tbsp grainy mustard
1 cup heavy cream
1 lb mushrooms. I use cremini..any kind will do
3 tbsp capers (optional) or more

Directions:
Directions:
Sprinkle ribs with salt and pepper. Use a big heavy pot. heat up olive oil.
Sear ribs in olive oil on all sides about 2 minutes.
Remove the short ribs to a plate.
Pour the wine and beef broth in the pot. Add Rosemary. Stir to combine scraping up the bits on the bottom of the pot.
Put the ribs in the pot,reduce heat to low, then cover the pot and simmer for 3 hours, you can also do this in the oven at 300 degrees.
After they have cooked. Remove ribs they should be very tender.
Stir in the mustard, cream and capers if you like. raise the heat to medium and let boil to thicken sauce.
Taste for seasonings add more salt and pepper if needed.
Cook mushrooms in separate pan with olive oil and butter till cooked.
Add mushrooms to sauce and add the ribs back to sauce.
Serve family style.
