4 boneless skinless chicken breast halves
1 Tbs. oil 1 1/2 Tbs. cornstarch
1 C. sliced carrots 1 tsp. onion powder
1 C. sliced celery 1 tsp. salt ( or 1 tsp. onion salt in place of powder and salt)
1 C. orange juice 1 1/2 C. cooked rice
1 can chicken broth

Brown chicken, both sides in oil. Move to the side of pan. Add carrots and celery. Cook and stir until carrots are crisp tender. Mix orange juice, broth, cornstarch, onion, and salt. Add to skillet. Bring to boil. Reduce heat and simmer until chicken is cooked about 10 minutes. At this point I slice chicken into strips across the grain. Stir in rice.

Orange marmalade can be spooned over the top if desired. Cover. Remove from heat and let stand 5 minutes. Fluff with fork. Also good over chow mien noodles.
