Chocolate Cake

1 cup sugar
3 T. butter
1 egg
1/2 c. cocoa
1 tsp. baking powder
1 c. flour
1/2 tsp. baking soda
boiling water

Directions:
Directions:
Boil a kettle of water.

Combine and mix sugar, butter and egg in a bowl.

Add cocoa to measuring cup and fill to 1 cup mark with boiling water.
Add to sugar mixture.

Sift flour with baking powder and add to bowl.

Mix baking soda with 1/2 c. boiling water and add to bowl.
Mix well to combine. The batter will be runny.

Pour batter into a parchment lined or greased and floured 8 or 9 inch cake pan.

Bake at 350º for apprx. 25 minutes.

This recipe can be easily doubled to make a layer cake.
 

Chocolate Frosting


Ingredients:

1/2 c. whipping cream
1 c. semi-sweet chocolate chips
2 c. icing sugar
1 tsp. vanilla

Directions:
Directions:
Melt chocolate chips and whipping cream together over very low heat.
Add icing sugar gradually off the heat and then stir in vanilla.
Mixture should be glossy.

This is enough to frost an 8 or 9 inch cake.

This simple recipe is our go-to family cake. It has been used for countless birthdays and has been decorated by Emma for several First Communion parties.

It can be easily doubled and used to make a layer cake. I sometimes use a 10 inch round pan when doubling and bake it for 35 to 40 minutes.
