8 slices bacon
8 eggs
Cheddar cheese, cut into 8 slices
8 English muffins
butter
salt and pepper

In a skillet, fry bacon until crispy. Set on a paper towel to cool. Wipe out the skillet but leave a little bacon grease in it. Reduce heat to medium-how.

In a bowl, scramble eggs. Pour into skillet. Cover and cook.

Meanwhile, cut muffins in half. Butter each side. Place on a cookie sheet and in oven. Turn oven on broil. As soon as the muffins start to golden, careful put cheese on the bottom half of each muffin. Toast until just melted. Remove from oven.

Cut cooked eggs into 8 squares. Place one square on the cheese half of the muffins. Break each piece of bacon in half and place on eggs. Top with top half of muffins.

Serve with fruit.

This is an easy and fast breakfast for a crowd. You can use any rolls or cheese or meat. Bacon and gouda cheese is delish! Ham and swiss is great! Serve with oranges, bananas or grapes.
