¾ lbs. mushrooms
3 T butter
3 T flour
4 C scalded milk (not boiling)
1 egg yolk
½ C sherry

Directions:
Directions:
Slice the caps of mushrooms and slice the stems. Sauté in 3 T butter until lightly browned. Sprinkle with 3 T flour and cook over low heat for 4 minutes. Add 4 cups of milk and simmer soup for 10 minutes.

Mix 1 egg yolk lightly beaten with ½ C of sherry and add to soup.

Add salt and pepper to taste - cook 2 minutes longer.
