4 C. Chicken broth (about) 3 russet potatoes, peeled and cubed
1 med. onion, chopped 4 to 6 strips bacon, chopped*
Salt and pepper to taste Shredded Cheddar Cheese

Directions:
Directions:
1. Combine, broth, potatoes, onion, salt and pepper in large pan and bring to boil. Reduce heat to medium high and boil until potatoes are tender.
2. While potatoes are cooking, fry (or microwave) bacon until crisp. Break into smaller pieces.
3. Drain bacon and transfer to broth mixture. Simmer additional 3 to 5 minutes. Sprinkle with cheese.
*Use scissors instead of a knife to chop partially frozen bacon.
