Ingredients: 1 pound dried red kidney beans Salt, pepper, garlic powder 1 bell pepper, chopped 1 lb andouille or smoked sausage 2 sticks celery, chopped 12ozs pickled pork or salt pork 1/2 each red/yellow onions 6 pork neck-bones 2 garlic cloves, chopped 3 tbsp. vegetable oil 3 sprigs of fresh parsley 2 cups cooked rice 2 sticks, green onions, chopped 2 bay leaves

Directions:In a dutch oven pot, sort and clean beans for dirt, rocks, and broken beans. Fill pot with water an inch above the beans and allow to soak at least four hours, but preferably over night. In a separate skillet, all 1 tablespoon of oil and saute vegetables until wilted and add to beans. Add bay leaves, salt, pepper, garlic powder to the pot to taste. Begin cooking the red beans on medium heat, stirring frequently.
In the skillet, add 1 tablespoon of oil and saute the pork to render the fat and drain grease before adding to beans, In a clean skillet, add 1 tablespoon of oil and saute andouille or smoked sausage and drain grease, then add to beans. Par boil the neck bones until tender and add to the red beans approximately 30 minutes before done. For creamier red beans, when beans are softening, stir more frequently and mash some against the side of the pot, Keep the water level approximately one inch above the beans. Cooking time is usually 2-3 hours. Red beans are best served over rice on a plate or in a bowl. If you like it spices, sprinkle on some Louisiana hot sauce. Notes: Anecdote: In New Orleans, kidney beans are called red beans, not to be confused with the small red beans that are used to make chili. Red beans (kidney beans) are traditionally cooked on Mondays.The reasons because families usually washed their clothes on a Monday. Since both of these tasks were time consuming, it became an early form of multitasking to put on a pot of red beans while washing the clothes. In the early days, it took all day to wash a week's load of family clothes.
